Experience my Mexican Lasagna with Daisy Cottage Cheese #DaisyDifference

As a CrossFitter, I need protein. Lots of protein. And sometimes I need it quickly. Why quickly? Because I have the #TampaTrio, my wonderful set of Irish Triplets (nearly 8, 9, and 10) that constantly keep me on the GO GO GO. My breakfast needs to be fast, it needs to be eaten (usually) in the car while I'm driving them to school, and my post-recovery protein also needs to be quick since I'm usually leaving the box to head to some where else.

And....I like to chew my protein. I go through phases where I'll drink it, but let's be honest, I like food.

Cottage cheese is an excellent source of protein. One half cup serving of low fat Daisy cottage cheese contains 90 calories and 13g of protein.

I've been alternating between yogurt, cottage cheese, and hard boiled eggs for quite some time now. And I have to say....I honestly think that I've developed an addiction to Daisy Cottage Cheese.

  • Daisy makes it easy to spot the regular Cottage Cheese, with dark blue lids, and light blue for the low fat variety. And let me tell you this is HUGE!! My favorite brand of yogurt has the same color lid (red) for the whole milk vanilla and the whole milk PLAIN. And Publix places them right next to each other. Do you know how many times I've grabbed the PLAIN, and wow, does Ella ever get a HUGE surprise when she takes that first bite. This won't happen with Daisy. Smile

For my breakfast I've been pairing Daisy with all my favorite fruits. I've paired it with grapes, pineapple, and peaches. Pineapple was my favorite.

I've also been enjoying it right out of the container! Yes, double dipping and all. Tongue Out

But I wanted to get my kids to eat it. They don't like cottage cheese right out of the container, so I needed to be creative.

And voila....MEXICAN LASAGNA was born!

Normally we have Taco Tuesday at our house. But since my girls got braces, they can no longer have corn/corn products. So I decided to try something different and wow...it was AWESOME!!

Here's the recipe:


1 pack of lasagna noodles

1 can of black beans

1 zucchini

2 small yellow squash

1 red bell pepper

1 large carrot

1 pack of frozen spinach (allowed to defrost, then squeeze all the water out)

2 cups shredded Mexican cheese blend

1 24oz container of 2% Daisy Cottage Cheese

1 (16-ounce) container refrigerated mild salsa (I used mild b/c of the kids)

1 (8-ounce) can tomato sauce

2.5 pounds lean ground turkey


Cook the noodles. Brown the turkey. While the turkey is browning, I chopped up all the veggies into teeny tiny pieces with my Ninja. My kids won't willingly eat zucchini or squash, so while I not a firm believer of "hiding" veggies from the kids, I did it for this recipe.

As the meat finished, I drained off any remaining fat, then added EVERYTHING but the cheeses to the meat, and got it all nice and sauteed.

In a separate bowl I combined the Daisy Cottage Cheese and the shredded cheese.

And then I layered. Sauce/meat mixture, noodles, cheese mixture, spinach, noodles, meat, noodles, cheese, spinach, etc, etc, etc., I'm sure I messed up the layering along the way since one of the kids was talking my ear off about Lego's.

But regardless, it came out SO GOOD! The kids ate their entire dinner, and Ella (my middle child, my most picky eater) came back and asked for SECONDS! Surprised That never happens.

Cover with foil and cook at 350 for 45 minutes. Remove the foil and allow the top layer of cheese to brown up a little bit.

  • I don't digest cottage cheese well but OH HOW I LOVE IT! I used to eat it with avocado and nuts as a my lunch. (Sounds weird, but super tasty.) This recipe looks delectable and I am drooling over it! Fingers crossed there will be cottage cheese once again in my future!

  • Hmmm...didn't realize the lasagna from the other night was destined for a blog. Maybe I have issues, I think I had 5 servings. It was really good with Sriracha sauce dumped all over it.
