My library schedule has been crazy lately. I've been working all over the south county region, filling in as the "in charge" librarian since we are short staffed. Normally I make the trio pancakes on Saturday morning, but I had to work this past Saturday, so I made them on Sunday instead.

I'll admit it...the directions while easy to understand were not something I was used to. Typically with my pancake mix I just add milk, mix and go.

These directions called for butter, eggs, and milk and/or water. Easy enough. I did need to add more milk than what the recipe called for because I like my batter a little thinner. 

The trio LOVED the blueberry pancakes I made them. LOVED them. My husband also had two pancakes (with eggs) and he said that they were very tasty, too!! I used the entire container that they sent, and we had enough pancakes left over for the next 2 mornings, too. That made breakfast super easy on this hard working mama!

Atkins 40 Wrap-Up

Back in the late 1990's, early 2000's, my husband and I both tried the Atkins Diet. We didn't really know what we were doing. We didn't do any sort of online research (resources were minimal back in the day) and we checked out a book from the library. That was it.

All we really understood from the book was that we were supposed to put our bodies into Ketosis, and eat mostly animal. Bacon, eggs, steak.

And that's what we did.

3 days into the diet I got sick. My stomach did not agree with all the meat, and revolted.

The NEW Atkins plan is NOTHING like what I remembered from 15 years ago.

I spent the last 2 months researching, learning, and implementing a low carb lifestyle following the NEW Atkins plan.

You'll notice that the the pyramid emphasizes a wide range of protein sources and nutrient-dense carbohydrates, such as (most) vegetables, certain fruits, nuts, dairy products and whole grains, that have a low impact on blood sugar. One of the benefits of this approach is that the average American can follow a controlled-carbohydrate lifestyle, eat until satisfied and achieve a healthy balance of fats and other nutrients -- all without having to count portions or calories.

After the 6 weeks I really felt like I understood how to eat a low carb diet.

I even went out to eat with co-workers and ordered this amazing salad!

It came with a crunchy Cuban bread, but I asked the server to please leave it off. When the salad arrived, the bread was sitting there along the side, but I took it off and sent it away ASAP so I wasn't tempted.

The past 6 weeks have certainly been eye-opening. I haven't weighed myself, but I've felt that my energy level has been through the roof. I'm up at 4:30am every morning and head right off to the gym. And then I work all day, am home by about 6:45pm and I have not once had that 3pm slump. I attribute that to the low carb diet and exercise routine.

The Atkins Plan really opened my eyes to foods that I had NOT been eating because I thought were not "healthy."

I'm finding myself full for longer, and full of energy! I love the low carb lifestyle.

Atkins Snacks for the busy working mom

As you probably know by now, I've returned to work full-time outside of the home.

I know I've mentioned it once or twice.

I know I've also mentioned how challenging it can be to try to get into a routine where I am making a healthy breakfast, and lunch for myself.

One thing that's been super easy for me while following the Atkins40 plan is SNACKS!!

Like most moms I get a slump around 3pm. I really try not to drink caffeine that late in the day because I need to be in bed by 9pm (I get up at 4:30am) so having a little pick-me-up snack has been just what I've needed to push through my last few hours at work.

My FAVORITE snack is the Chocolate Covered Almonds!

They are SO good. And I feel like I am able to eat a treat that's GOOD for me too! We all know Almonds are a power food, and well, chocolate is a feel good food, so it's a win/win!!

With only 1.5 net carbs, that's a drop in the bucket off my 40 daily alloted carbs!

So...I've been trying to follow the plan, and this is the start of my 4th week. In 3 weeks I've lost 6 pounds. I'm really quite happy with that. 1.5-2 pounds per week is what the experts recommend, and I'm right there!

And I survived Thanksgiving, and with Christmas right around the corner I feel confident and in control!
