Busy Being Fabulous

The past two months of my life have been insanely busy.

I had my entire home remodeled, every single room. Yes, you read that correctly. EVERY SINGLE ROOM.

I went from a mess like this IN EVERY SINGLE ROOM

to this IN EVERY SINGLE ROOM

Of course there was a TON of work that went on in between.

James and I did a lot of the "pre" work ourselves to save on money. That means I ripped out all of the old flooring. Yes, ME! In every single room of the house. We also repainted the entire interior (the same colors) and we did some major spring cleaning. Since I had to pack everything up, I figured I might as well get rid of stuff we no longer used, or needed. We also got rid of a lot of furniture that was really just ugly and after my house looked so pretty, I wasn't about to bring it back in the my nice new clean house!

I feel like a HUGE weight has been lifted off my shoulders.

My house is so clean, and so organized. We significantly increased the amount of storage space in the house. By like, a LOT. It was a TON of work, took a TON of time, I cried a lot. I ate crappy foods more than I should have, and I didn't sleep well. Also, since so much was going on INSIDE my house, my lawn couldn't be mowed because I had workers using my lawn as a staging area.

It was a mess. I was totally out of control.

But some good things happened too. I got #InstaFamous Cool

A photo that I shared with the CrossFit Games went viral. I was featured on their Instagram page, their Twitter page, had thousands of retweets, and I received tens of thousands of comments though all my social media channels.

 

Over 26,000 likes, and more than 1,300 shares. And that's just on Facebook.

I was totally blown away.

And since I'm such a nut, I was so excited when my photo appeared NEXT to the most FAMOUS of all CrossFitters;

It was all pretty dang incredible.

Of course, I had a few haters from my past life who had to try to discredit me, but HELLO, my story speaks for itself.

And this is all I have to say about that.

 

So now my life is pretty much getting back to normal. I've got a lot of stuff coming up! The AMRAP for Ronin on April 12th, Iron Girl on April 13th, TNL Festivus Games on April 19th, and our Walk for Autism Speaks-Tampa Bay on April 26th.

Pretty busy.

But it's not just me that's busy being fabulous. My oldest daughter WON her class public speaking competition. She will represent this Friday at the school wide competition. I honestly believe that she's got a shot at winning the school and representing her school at the county level, and then we'll see where it goes from there.

 

 

Even our dog got a shout out from Milk Bone.

 

 They contacted me and I had to sign a photo release allowing them full access to use that photo. Okay. #instafamouslabrador

As a CrossFitter, I need protein. Lots of protein. And sometimes I need it quickly. Why quickly? Because I have the #TampaTrio, my wonderful set of Irish Triplets (nearly 8, 9, and 10) that constantly keep me on the GO GO GO. My breakfast needs to be fast, it needs to be eaten (usually) in the car while I'm driving them to school, and my post-recovery protein also needs to be quick since I'm usually leaving the box to head to some where else.

And....I like to chew my protein. I go through phases where I'll drink it, but let's be honest, I like food.

Cottage cheese is an excellent source of protein. One half cup serving of low fat Daisy cottage cheese contains 90 calories and 13g of protein.

I've been alternating between yogurt, cottage cheese, and hard boiled eggs for quite some time now. And I have to say....I honestly think that I've developed an addiction to Daisy Cottage Cheese.

 

  •  Daisy Cottage Cheese contains no more than four high quality ingredients, compared with other leading brands which have 10 or more. 4! And it passed the #TampaTrio test. They could pronounce EVERY ingredient on the label.
  • Daisy makes it easy to spot the regular Cottage Cheese, with dark blue lids, and light blue for the low fat variety. And let me tell you this is HUGE!! My favorite brand of yogurt has the same color lid (red) for the whole milk vanilla and the whole milk PLAIN. And Publix places them right next to each other. Do you know how many times I've grabbed the PLAIN, and wow, does Ella ever get a HUGE surprise when she takes that first bite. This won't happen with Daisy. Smile

For my breakfast I've been pairing Daisy with all my favorite fruits. I've paired it with grapes, pineapple, and peaches. Pineapple was my favorite.

I've also been enjoying it right out of the container! Yes, double dipping and all. Tongue Out

But I wanted to get my kids to eat it. They don't like cottage cheese right out of the container, so I needed to be creative.

And voila....MEXICAN LASAGNA was born!

Normally we have Taco Tuesday at our house. But since my girls got braces, they can no longer have corn/corn products. So I decided to try something different and wow...it was AWESOME!!

Here's the recipe:

Ingredients:

1 pack of lasagna noodles

1 can of black beans

1 zucchini

2 small yellow squash

1 red bell pepper

1 large carrot

1 pack of frozen spinach (allowed to defrost, then squeeze all the water out)

2 cups shredded Mexican cheese blend

1 24oz container of 2% Daisy Cottage Cheese

1 (16-ounce) container refrigerated mild salsa (I used mild b/c of the kids)

1 (8-ounce) can tomato sauce

2.5 pounds lean ground turkey

Steps:

Cook the noodles. Brown the turkey. While the turkey is browning, I chopped up all the veggies into teeny tiny pieces with my Ninja. My kids won't willingly eat zucchini or squash, so while I not a firm believer of "hiding" veggies from the kids, I did it for this recipe.

As the meat finished, I drained off any remaining fat, then added EVERYTHING but the cheeses to the meat, and got it all nice and sauteed.

In a separate bowl I combined the Daisy Cottage Cheese and the shredded cheese.

And then I layered. Sauce/meat mixture, noodles, cheese mixture, spinach, noodles, meat, noodles, cheese, spinach, etc, etc, etc., I'm sure I messed up the layering along the way since one of the kids was talking my ear off about Lego's.

But regardless, it came out SO GOOD! The kids ate their entire dinner, and Ella (my middle child, my most picky eater) came back and asked for SECONDS! Surprised That never happens.

Cover with foil and cook at 350 for 45 minutes. Remove the foil and allow the top layer of cheese to brown up a little bit.

Reebok Skyscape Review-My Pinkalicious Review

A few weeks ago my son, in an autism tantrum, broke my favorite pair of casual shoes. Undecided I was bummed, but low and behold...the shoe gods were looking out for me, because shortly thereafter, these lovely shoes came in the mail for me!

I loved the personal touch of including my name on the tag. It made me feel so special. I was crossing my fingers and hoping that the shoes were pink. Pink is my favorite color.

And....


YES!! I was excited to try them on! As soon as I picked them up, I noticed right away how light weight the shoes were. They were also really really "smooth." That probably sounds weird, but the shoes were just silky feeling. I jumped on the Reebok Skyscape site and learned that the Skyscapes are made of a light weight FOAM material in the upper that gives it such softness and flexibility. And lightweight....only 5 ounces.

I couldn't wait to put them on! It was a beautiful Florida afternoon, so I slipped them on, and took the #bigyellowdog, Matthew for a walk!

I loved the way that they felt. They were so comfortable and I immediately fell in love with them.

I even wore them to CrossFit! Tongue Out I kicked back and watched my friends tackle the last WOD of the CrossFit Games, the horrible 14.5!!

And then I had a parent/teacher conference, and since my normal casual wear shoes had been trashed by the boy, I decided to grab my Skyscape and paired them with a cute polka dot dress from Gwynnie Bee!

I wore these shoes all over town!

They started to get a tad dirty, so I thew them in the washing machine! That's right! These shoes are machine washable! Just remove the insole, wash the both on cold, delicate cycle with your normal soap, and then let air dry! Mine came out looking as good as new! Awesome!

They were so light and comfortable that I honestly forgot quite a few times that I even had them on!

I found these shoes to absolutely run TRUE TO SIZE and I've worn them both with and without socks.

I love these shoes and plan on buying myself another pair in a different color. As much as I love pink, I can't wear it with everything....or can I?? #Pinkalicious
