Music Monday: Catch My Breath

I'm one of those people that finds a song and really connects with it and listens to it over and over. And over. Catch My Breath by Kelly Clarkson is what is really moving me these days. I'm connecting with it on so many levels. It reminds me of where I have been, the journey that brought me to where I am now, and the plans I have for the future. No one can hold me back.

What's a good Irish girl to do?

I am Irish. Love my Irish (and Scottish) heritage. Every year I look forward to St. Paddy's Day because I LOVE Corned Beef and Cabbage. But throughout the past few years, my love of the stuff has been hindered by the thought of the amount of fat in the dish, and it's made from cow. And I haven't been eating mammals this past year. While Corned Beef is high in fat, is is also loaded with B Vitamins, Thiamin, Zinc, and of course, protein. But a little 3oz serving packs a whopping 210 calories, and my kids and husband don't really like it so you know what that means? I eat nearly all of it. But not this year! I'm not buying a corned beef! I have been tweaking and researching and I've decided I'm going to make a Irish Stew Smile I have no idea how it will turn out, but here is the recipe:

Jenny's Cross Your Fingers Chicken Stew

2 pounds boneless skinless chicken breast cubed
2 large onions, chopped
4-5 cloves of garlic, minced
1 tablespoon coconut oil
a lot of carrots, peeled and roughly chopped (we love carrots!!)
a package of mushrooms, sliced

1 head of cabbage, sliced
1 cup chopped asparagus, in 1/4-inch pieces
4 cups chicken broth
1 cup water
1 tablespoon fresh thyme leaves (and more for optional garnish)
salt and pepper to taste

I am going to throw it all in a crockpot, cross my fingers,  put on low and let simmer all day since Ella and I are heading off to run in the Citrus Trail Marathon Series.
